It’s been cold in Los Angeles for the past few weeks. It even rained for a few days and we are still hoping for more rain to come. We need it.
During these cold days, what better food to have but something hot, delicious, soothing, and comforting. Something everyone loves and enjoy slurping while piping hot.
At our home, cold and rainy days call for a bowl (or 2 or 3) of the Mexican dish, POZOLE!
My family loves Pozole, particularly Chicken Pozole Rojo (Red Chicken Pozole). It is easy to make. Simply boil the chicken (my version does not need sauteeing) with some powdered seasonings, shred, and put all the ingredients together and BAM! Ready to serve Chicken Pozole Rojo!
